Chicken:

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil

Mushroom Filling:

  • 1 tablespoon butter
  • 2 cups mushrooms (finely chopped)
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley

Additional:

  • 1/4 teaspoon paprika
  • toothpicks or kitchen twine

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Prepare Mushroom Filling: In a skillet, heat olive oil and butter. Add mushrooms, cook until softened. Stir in garlic, salt, pepper, and thyme. Mix in cheeses and parsley.
  3. Prepare Chicken: Cut a pocket in each chicken breast. Stuff with mushroom mixture. Secure with toothpicks or twine. Season outside with paprika, salt, and pepper.
  4. Cook Chicken: Sear stuffed chicken in a skillet. Bake in the oven until cooked through.
  5. Serve: Rest for 5 minutes before serving.
