Ingredients
Baby Potatoes:
1 1/2 pounds baby potatoes, halved
Seasoning Mixture:
2 tablespoons olive oil, 2 tablespoons Dijon mustard, 1 tablespoon whole grain mustard, 1 tablespoon honey, 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, mix olive oil, Dijon mustard, whole grain mustard, honey, garlic powder, smoked paprika, salt, and pepper. Add halved baby potatoes and coat them well. Arrange the potatoes cut-side down on the baking sheet.
Roast for 25–30 minutes until golden and crispy, flipping halfway through for even browning.
Sprinkle with herbs if desired. Serve warm as a side dish or appetizer.
