Description

This No-Bake Banana Split Cheesecake is a creamy, fruity dessert perfect for summer. Layers of smooth cream cheese filling alternate with fresh bananas, topped with pineapple, strawberries, walnuts, and a drizzle of chocolate syrup. It requires no baking, making it easy to prepare and delightful to serve chilled.

Ingredients

Scale

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 2 tablespoons granulated sugar

Filling

  • 16 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whipped topping, plus more for garnish

Toppings

  • 2 ripe bananas, sliced
  • 1/2 cup crushed pineapple, drained
  • 1 cup strawberries, chopped
  • 1/4 cup chocolate syrup
  • 1/4 cup chopped walnuts
  • Maraschino cherries for garnish

Instructions

  1. Prepare the crust: In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust layer. Chill it in the refrigerator for 15 minutes to set.
  2. Make the filling: In a large bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. Gently fold in 1 1/2 cups of whipped topping until fully combined, creating a light cheesecake filling.
  3. Assemble the layers: Spread half of the cheesecake mixture evenly over the chilled crust. Layer the sliced bananas over this first layer, then spread the remaining cheesecake mixture on top and smooth the surface.
  4. Chill to set: Place the assembled cheesecake in the refrigerator and chill for at least 4 hours, or until the filling is firm.
  5. Add toppings and serve: Before serving, top the cheesecake with crushed pineapple, chopped strawberries, a drizzle of chocolate syrup, chopped walnuts, additional dollops of whipped topping, and maraschino cherries for a classic banana split presentation.

Notes

  • For extra stability, dissolve 1 teaspoon of unflavored gelatin in warm water and mix it into the cheesecake filling.
  • Best served chilled and consumed within 2 days for optimal freshness.
