Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
Cheesecake Filling:
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 1/2 cups heavy whipping cream, cold
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)

Instructions
- Prepare the Graham Cracker Crust: In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a 9-inch springform pan and chill.
- Make the Cheesecake Filling: Beat cream cheese, powdered sugar, vanilla, and lemon juice until smooth. Whip heavy cream separately, then fold into the cream cheese mixture. Gently fold in mixed berries.
- Assemble and Chill: Pour the filling over the chilled crust, smooth the top, and refrigerate for at least 6 hours or overnight.
- Serve: Top with additional fresh berries before serving.
Notes
- You can use frozen berries, but remember to thaw and drain them to prevent excess moisture.
- For individual servings, consider using mini jars or cupcake liners instead of a springform pan.
