- 1 teaspoon vanilla extract
- 2 cups powdered sugar
Chocolate Coating:
- 1½ cups semisweet chocolate chips
- 1 tablespoon coconut oil or shortening (optional for smoother chocolate)
Instructions
- Mix Peanut Butter Mixture: In a medium bowl, combine peanut butter, softened butter, and vanilla extract. Mix until smooth. Gradually add powdered sugar, stirring until a thick dough forms.
- Form Balls: Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes until firm.
- Prepare Chocolate Coating: In a microwave-safe bowl, melt chocolate chips and coconut oil (if using) in 30-second intervals, stirring in between, until fully melted and smooth.
- Coat Peanut Butter Balls: Dip each peanut butter ball into the melted chocolate, coating completely. Place the coated balls back on the parchment paper and refrigerate until the chocolate is set.
- Serve: Serve chilled or at room temperature.
Notes
- For added crunch, mix in ¼ cup of crushed graham crackers or rice cereal before rolling.
