Description

These delightful No-Bake Peppermint Cheesecake Bites are a perfect holiday treat. Creamy cheesecake filling with a hint of peppermint, coated in crushed peppermint candies or cookie crumbs, these bites are easy to make and even easier to enjoy.

Cheesecake Filling:

  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup white chocolate chips (melted and slightly cooled)
  • 1 1/2 cups whipped topping

Mix-ins and Coating:

  • 1 cup crushed graham crackers or chocolate cookie crumbs
  • 1/3 cup finely crushed peppermint candies (plus extra for topping)

Instructions

  1. In a large mixing bowl, beat the cream cheese until smooth. Add the powdered sugar, vanilla extract, and peppermint extract, and mix until fully combined.
  2. Stir in the melted white chocolate until smooth.
  3. Gently fold in the whipped topping, crushed graham crackers or cookie crumbs, and crushed peppermint candies until evenly incorporated.
  4. Cover and chill the mixture in the refrigerator for at least 1 hour, or until firm enough to handle.
  5. Once chilled, scoop and roll into bite-sized balls. Roll each ball in additional crushed peppermint candies or cookie crumbs for coating.
  6. Place on a parchment-lined tray and refrigerate for at least 30 minutes before serving.
