Cheesecake Filling:
- 8 oz cream cheese (softened)
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 cup white chocolate chips (melted and slightly cooled)
- 1 1/2 cups whipped topping
Mix-ins and Coating:
- 1 cup crushed graham crackers or chocolate cookie crumbs
- 1/3 cup finely crushed peppermint candies (plus extra for topping)
Instructions
- In a large mixing bowl, beat the cream cheese until smooth. Add the powdered sugar, vanilla extract, and peppermint extract, and mix until fully combined.
- Stir in the melted white chocolate until smooth.
- Gently fold in the whipped topping, crushed graham crackers or cookie crumbs, and crushed peppermint candies until evenly incorporated.
- Cover and chill the mixture in the refrigerator for at least 1 hour, or until firm enough to handle.
- Once chilled, scoop and roll into bite-sized balls. Roll each ball in additional crushed peppermint candies or cookie crumbs for coating.
- Place on a parchment-lined tray and refrigerate for at least 30 minutes before serving.

- For a festive look, drizzle the tops with melted chocolate or dip the bites halfway in dark chocolate.
