Ingredients

Streusel Topping:

1/2 cup chopped pecans, 1/4 cup all-purpose flour, 1/4 cup light brown sugar, 2 tablespoons cold unsalted butter, cubed, 1/2 teaspoon ground cinnamon


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
  2. Prepare the muffin batter: In a large bowl, whisk together the flour, rolled oats, brown sugar, baking powder, baking soda, salt, and cinnamon. In a separate bowl, whisk the melted butter, buttermilk, eggs, and vanilla extract until smooth. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  3. Make the streusel topping: Combine the chopped pecans, flour, brown sugar, and cinnamon in a small bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
