Cookie Dough:
- 1 cup unsalted butter (softened)
- 1 cup light brown sugar (packed)
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour

- ½ teaspoon salt
- 2½ cups old-fashioned rolled oats
- 1½ cups semisweet chocolate chips
Instructions
- Preheat the oven: To 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together ingredients: In a large bowl, mix the butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
- Combine dry ingredients: In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet ingredients and mix.
- Add oats and chocolate chips: Fold them into the dough until combined.
- Bake: Scoop dough onto baking sheets and bake for 10–12 minutes until golden. Cool on a wire rack.
Notes
- For chewier cookies, slightly underbake and let them finish setting on the pan.
- You can add chopped nuts or swap in dark chocolate chips for variation.
