Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla: Beat in the eggs one at a time, then add the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually mix into the wet mixture.
- Stir in oats and extras: Stir in the oats, and fold in raisins or chocolate chips and walnuts if using.
- Bake: Scoop dough into balls, place on baking sheet, and bake for 10–12 minutes until golden.
- Cool: Let cool on the baking sheet before transferring to a wire rack.
Notes
- For chewier cookies, slightly underbake and allow them to finish setting on the baking sheet.
- You can substitute dried cranberries or white chocolate chips for a twist.
