  • 1 1/2 cups dried cranberries (Craisins)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in the eggs one at a time, then add the vanilla extract and mix until combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add to the wet ingredients and mix until just combined.
  5. Stir in oats and mix-ins: Stir in the rolled oats, dried cranberries, and nuts if using.
  6. Bake: Drop rounded tablespoons of dough onto the prepared baking sheets and bake for 10-12 minutes until golden brown.
