Description

These Oatmeal Muffins are a wholesome and delicious treat perfect for breakfast or a snack. Made with hearty oats and warm spices, these muffins are easy to make and even easier to enjoy.

Dry Ingredients:

  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)

Wet Ingredients:

  • 1 cup milk
  • 1 large egg
  • 1/4 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or spray with nonstick cooking spray.
  2. Soak oats: In a bowl, combine the oats and milk, and let soak for 10 minutes.
  3. Prepare dry ingredients: In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Mix wet ingredients: In the bowl with the soaked oats, add the egg, oil or melted butter, and vanilla extract. Stir to combine.
  5. Combine wet and dry: Add the wet ingredients to the dry ingredients and mix just until combined. Do not overmix.
  6. Bake: Divide the batter evenly among the muffin cups. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and enjoy: Let cool for 5 minutes before transferring to a wire rack.

Notes

  • You can stir in 1/2 cup of raisins, chocolate chips, or chopped nuts for variety.
  • For a healthier twist, use half whole wheat flour.
