Main Soup:

  • 6 medium russet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups whole milk
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme

Optional Garnishes:

  • ½ cup heavy cream
  • ½ cup chopped green onions or chives
  • ½ cup shredded cheddar cheese
  • Crumbled bacon

Instructions

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and cook until soft. Add garlic and cook for 1 minute.
  2. Sprinkle in the flour and stir constantly for 1–2 minutes to create a roux.
  3. Slowly whisk in the chicken broth, then add potatoes, salt, pepper, and thyme. Boil, then simmer for 15–20 minutes.
  4. Use a potato masher or immersion blender to partially mash the soup. Stir in milk and cream, simmer for 5 minutes.
  5. Taste and adjust seasoning. Serve hot, garnished with green onions, cheese, and bacon if desired.

Notes

  • For a vegetarian version, use vegetable broth and omit the bacon.
  • Leftovers thicken as they sit and can be thinned with a little milk or broth when reheating.
