Main Soup:
- 6 medium russet potatoes, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups whole milk
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
Optional Garnishes:
- ½ cup heavy cream
- ½ cup chopped green onions or chives
- ½ cup shredded cheddar cheese
- Crumbled bacon
Instructions
- In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and cook until soft. Add garlic and cook for 1 minute.
- Sprinkle in the flour and stir constantly for 1–2 minutes to create a roux.
- Slowly whisk in the chicken broth, then add potatoes, salt, pepper, and thyme. Boil, then simmer for 15–20 minutes.
- Use a potato masher or immersion blender to partially mash the soup. Stir in milk and cream, simmer for 5 minutes.
- Taste and adjust seasoning. Serve hot, garnished with green onions, cheese, and bacon if desired.
Notes
- For a vegetarian version, use vegetable broth and omit the bacon.
- Leftovers thicken as they sit and can be thinned with a little milk or broth when reheating.
