For the Wonton Tacos:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breast, diced small
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 24 square wonton wrappers
- Nonstick spray or oil for baking
For the Honey Lime Chicken:
- 2 tablespoons soy sauce
- 2 tablespoons honey
- Juice and zest of 1 lime
- 1 teaspoon sesame oil
- 1 teaspoon minced garlic
- 1/2 teaspoon grated fresh ginger
For Topping:
- 1/2 cup shredded red cabbage
- 1/4 cup shredded carrots
- 1/4 cup chopped green onions
- 1 tablespoon chopped cilantro
- Sesame seeds for garnish (optional)
Instructions
- Preheat oven and prepare wonton shells: Preheat oven to 375°F. Lightly spray a mini muffin tin with nonstick spray. Press wonton wrappers into the muffin cups to form taco shells. Bake until golden and crisp.
- Cook the chicken: Heat olive oil in a skillet, add diced chicken, season with salt and pepper, and cook until fully cooked.
- Make the sauce: Whisk together soy sauce, honey, lime juice and zest, sesame oil, garlic, and ginger. Simmer with chicken until thickened.
- Assemble the tacos: Fill each wonton shell with honey lime chicken. Top with cabbage, carrots, green onions, and cilantro. Sprinkle with sesame seeds if desired.
Notes
- You can make the wonton cups a day ahead and store them in an airtight container.
- For a spicy kick, add sriracha or red pepper flakes to the sauce.
