For the Wonton Tacos:

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breast, diced small
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 24 square wonton wrappers
  • Nonstick spray or oil for baking

For the Honey Lime Chicken:

  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • Juice and zest of 1 lime
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger

For Topping:

  • 1/2 cup shredded red cabbage
  • 1/4 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1 tablespoon chopped cilantro
  • Sesame seeds for garnish (optional)

Instructions

  1. Preheat oven and prepare wonton shells: Preheat oven to 375°F. Lightly spray a mini muffin tin with nonstick spray. Press wonton wrappers into the muffin cups to form taco shells. Bake until golden and crisp.
  2. Cook the chicken: Heat olive oil in a skillet, add diced chicken, season with salt and pepper, and cook until fully cooked.
  3. Make the sauce: Whisk together soy sauce, honey, lime juice and zest, sesame oil, garlic, and ginger. Simmer with chicken until thickened.
  4. Assemble the tacos: Fill each wonton shell with honey lime chicken. Top with cabbage, carrots, green onions, and cilantro. Sprinkle with sesame seeds if desired.
