For the Fajitas:

  • 1 1/2 lbs boneless, skinless chicken breasts, thinly sliced
  • 3 bell peppers (red, yellow, green), thinly sliced
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil

For the Seasoning:

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • juice of 1 lime
  • chopped fresh cilantro for garnish (optional)
  • warm flour or corn tortillas for serving

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C).
  2. Prepare the Chicken and Vegetables: In a large bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, pepper, and lime juice. Add sliced chicken, bell peppers, and onion to the bowl and toss to coat evenly.
  3. Bake: Spread the mixture on a large sheet pan in a single layer. Bake for 20–25 minutes until chicken is cooked through and vegetables are tender.
  4. Finish and Serve: Remove from oven, toss everything together, and serve immediately with warm tortillas. Garnish with fresh cilantro if desired.
