Description

This One-Pan Taco Zucchini Skillet is a flavorful and easy-to-make dish that combines ground beef or turkey with zucchini, black beans, corn, and melted cheese. Perfect for a quick weeknight dinner!

Ground Beef/Turkey Mixture:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey

Veggies and Seasonings:

  • 1/2 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 medium zucchinis (diced)
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and black pepper to taste

Add-Ins:

  • 1/2 cup canned corn (drained)
  • 1/2 cup canned black beans (drained and rinsed)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped fresh cilantro
  • Juice of 1/2 lime

Instructions

  1. Cook the Meat: Heat olive oil in a skillet, add ground beef or turkey, and cook until browned. Drain excess fat if needed.
  2. Sauté Veggies: Add onion and garlic, sauté until softened.
  3. Add Zucchini and Seasonings: Stir in zucchini, taco seasoning, chili powder, cumin, salt, and pepper. Cook until zucchini is tender.
  4. Combine Add-Ins: Add corn and black beans, heat through. Top with cheese, cover, and melt.
  5. Finish and Serve: Remove from heat, garnish with cilantro and lime juice. Serve hot.
