  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Seasonings and Liquids:

  • 1 packet taco seasoning
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 2 cups beef broth

Additional Ingredients:

  • 8 ounces uncooked pasta shells or rotini
  • 1/2 cup sour cream
  • 1 ½ cups shredded cheddar cheese
  • Salt and black pepper, to taste
  • Fresh cilantro or green onions, for garnish (optional)

Instructions

  1. Heat olive oil: In a large deep skillet or Dutch oven, heat olive oil over medium heat.
  2. Cook beef: Add ground beef and cook until browned, breaking it up with a spoon. Drain excess grease if needed.
  3. Add onion and garlic: Add chopped onion and minced garlic, cook until softened.
  4. Season and simmer: Stir in taco seasoning, Rotel, and beef broth. Add uncooked pasta, bring to a boil, then simmer covered for 12–15 minutes.
  5. Finish pasta: Stir in sour cream and shredded cheese until melted and creamy. Season with salt and pepper.
  6. Garnish and serve: Garnish with cilantro or green onions, if desired. Serve hot.
