  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Vegetables:

  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 medium carrots, sliced
  • 1 red bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup broccoli florets

Other:

  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • juice of 1/2 lemon

Instructions

  1. Heat olive oil: In a large skillet over medium-high heat, add olive oil.
  2. Cook chicken: Season chicken with paprika, garlic powder, thyme, salt, and pepper. Add to skillet and cook until golden brown and cooked through.
  3. Sauté vegetables: In the same skillet, sauté onion, carrots, and bell pepper until slightly softened. Add zucchini and broccoli, then stir in garlic.
  4. Add broth and chicken: Pour in chicken broth, return chicken to the skillet, and simmer until vegetables are tender.
  5. Finish: Stir in parsley and lemon juice before serving.
