- 3 cups chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes (optional)
Additional Ingredients:
- 2 cups fresh baby spinach
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat the olive oil: In a large pot or Dutch oven over medium-high heat.
- Cook Italian sausage: Break it up with a spoon until browned and cooked through, about 5-7 minutes.
- Add onion and garlic: Cook until softened, then add farro, tomatoes, broth, oregano, basil, and red pepper flakes.
- Simmer: Cover and simmer for 25-30 minutes until farro is tender.
- Add spinach: Cook until wilted, then season with salt and pepper.
- Finish: Stir in Parmesan cheese and garnish with parsley before serving.
