Description

This One Pot French Onion Pasta is a rich and comforting meal that combines deeply caramelized onions with creamy Gruyère and Parmesan cheeses. Perfectly cooked pasta simmers in savory beef broth and cream to create a luscious sauce that embodies the classic flavors of French onion soup, all in one simple pot.

Ingredients

Scale

Base

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 3 large yellow onions, thinly sliced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp sugar

Flavorings

  • 4 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)

Pasta & Liquids

  • 12 oz pasta (penne or fettuccine)
  • 4 cups beef broth (low sodium)
  • 1 cup water

Finishing

  • 1/2 cup heavy cream
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • Optional: fresh parsley for garnish

Instructions

  1. Caramelize the Onions: In a large pot or deep skillet over medium heat, melt the butter and olive oil together. Add the thinly sliced onions, salt, pepper, and sugar. Cook slowly for 20 to 25 minutes, stirring often, until the onions are deeply golden and caramelized, developing a sweet and rich flavor.
  2. Add Garlic and Aromatics: Stir in the minced garlic and cook for 1 minute until fragrant. Then add the balsamic vinegar and thyme, mixing well to infuse the onions with their distinctive flavors.
  3. Cook the Pasta: Add the dry pasta to the pot along with the beef broth and water. Bring the mixture to a boil, then reduce the heat to a simmer. Cook uncovered, stirring occasionally, for 12 to 15 minutes or until the pasta is tender and the liquid has thickened into a creamy sauce.
  4. Finish with Cream and Cheese: Stir in the heavy cream, shredded Gruyère, and grated Parmesan until melted and smooth throughout the sauce. Taste and adjust seasoning if needed.
  5. Serve and Garnish: Spoon the pasta into bowls and garnish with fresh parsley if desired. Serve hot for a comforting and flavorful meal.

Notes

  • For a vegetarian version, substitute beef broth with mushroom or vegetable broth.
  • You can add cooked mushrooms to the dish for extra umami flavor.
