  • 14 oz smoked kielbasa (sliced into ½-inch rounds)
  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 (14.5 oz) can diced tomatoes (undrained)
  • 8 oz uncooked penne or rotini pasta
  • 1 ½ cups shredded cheddar cheese
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • Salt to taste
  • Chopped parsley for garnish

Instructions:

  1. Heat olive oil: In a large pot or deep skillet over medium heat, add olive oil.
  2. Cook kielbasa: Add sliced kielbasa and cook until lightly browned.
  3. Sauté onion and garlic: Add diced onion, sauté, then stir in garlic.
  4. Add liquids and pasta: Pour in chicken broth, heavy cream, diced tomatoes, pasta, paprika, pepper, and salt. Bring to a boil.
  5. Simmer: Reduce heat, cover, and simmer for 12–15 minutes until pasta is tender.
  6. Add cheese: Remove from heat, stir in cheddar cheese until melted and creamy.
  7. Garnish and serve: Garnish with parsley and serve hot.
