- 1/3 cup basil pesto (store-bought or homemade)
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 cup cherry tomatoes, halved
- 1–2 balls fresh burrata cheese
- Fresh basil leaves for garnish (optional)
- Red pepper flakes for heat (optional)
Instructions
- Cook the Pasta: In a large pot or deep skillet, combine the pasta, broth, olive oil, salt, and pepper. Bring the mixture to a boil over medium-high heat, then reduce to a simmer. Cook uncovered for 10–12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
- Add Flavors: Stir in the basil pesto, lemon zest, lemon juice, and cherry tomatoes. Continue cooking for an additional 1–2 minutes, allowing everything to warm through and become well coated with the sauce.
- Add Burrata and Serve: Remove the pot from heat. Tear the fresh burrata cheese over the top of the pasta, letting the warmth gently melt the cheese for a creamy finish. Serve immediately, garnished with fresh basil leaves and a sprinkle of red pepper flakes if desired.
