For the Bolognese:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, grated or finely chopped
- 1 celery stalk, finely chopped
- 1 lb ground beef
- 1 tablespoon tomato paste
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Orzo:
- 1 cup uncooked orzo pasta
- 2 1/2 cups beef broth
- 1/4 cup whole milk or cream
- Grated Parmesan cheese and chopped fresh basil for garnish
Instructions
- Prepare the Bolognese: Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery; cook until softened. Stir in garlic, then add ground beef and cook until browned. Drain excess fat if needed. Stir in tomato paste and cook for 2 minutes.
- Add Ingredients: Add crushed tomatoes, oregano, basil, salt, and pepper. Mix well. Pour in orzo and beef broth, bring to a boil, then simmer for 10-12 minutes until orzo is tender.
- Finish the Dish: Stir in milk or cream, cook for 2 more minutes. Serve hot, garnished with Parmesan and basil.

- For a lighter version, use ground turkey or chicken.
