Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade)

Rice and Sauce:

  • 1 cup long-grain white rice, uncooked
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup frozen corn (optional)
  • Salt and pepper to taste

Garnish:

  • Chopped cilantro and sliced green onions (optional)

Instructions

  1. Cook Ground Beef Mixture: In a large skillet over medium heat, cook the ground beef and diced onion until browned. Add garlic, then taco seasoning.
  2. Add Rice and Sauce: Stir in rice, diced tomatoes, tomato sauce, beef broth, and corn. Bring to a boil, then simmer covered for 18–20 minutes.
  3. Finish and Serve: Remove from heat, sprinkle with cheddar cheese, cover, and let sit until melted. Garnish with cilantro and green onions before serving.
