Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
Rice and Sauce:
- 1 cup long-grain white rice, uncooked
- 1 (14.5 oz) can diced tomatoes, with juices
- 1 (8 oz) can tomato sauce
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup frozen corn (optional)
- Salt and pepper to taste
Garnish:
- Chopped cilantro and sliced green onions (optional)
Instructions
- Cook Ground Beef Mixture: In a large skillet over medium heat, cook the ground beef and diced onion until browned. Add garlic, then taco seasoning.
- Add Rice and Sauce: Stir in rice, diced tomatoes, tomato sauce, beef broth, and corn. Bring to a boil, then simmer covered for 18–20 minutes.
- Finish and Serve: Remove from heat, sprinkle with cheddar cheese, cover, and let sit until melted. Garnish with cilantro and green onions before serving.
Notes
- For a spicier version, add chopped jalapeños or hot sauce.
- This dish can be made with ground turkey or chicken.
