  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 3 cups beef broth
  • 8 ounces uncooked spaghetti
  • 1/2 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • Chopped cilantro or green onions for garnish (optional)

Instructions

  1. In a large skillet or pot, heat olive oil over medium heat. Add ground beef and cook until browned, about 5–6 minutes, breaking it apart with a spoon.
  2. Add diced onion and garlic, cooking until softened. Drain any excess fat.
  3. Stir in taco seasoning, diced tomatoes with green chilies, tomato sauce, and beef broth. Bring the mixture to a simmer.
  4. Add uncooked spaghetti, breaking it in half if needed. Press the pasta down into the liquid.
  5. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  6. Remove from heat and stir in shredded cheese until melted and creamy. Season with salt and pepper to taste.
  7. Garnish with chopped cilantro or green onions and serve hot.
