- 1 pound ground beef
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 8 ounces mushrooms (sliced)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- 2 cups beef broth
- 1 package (20 oz) refrigerated cheese tortellini
- 1/2 cup sour cream
- 1/2 cup heavy cream
- Chopped parsley (for garnish, optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
- Add the diced onion, garlic, and mushrooms to the skillet. Sauté for 5–6 minutes until the vegetables are tender.
- Stir in salt, pepper, paprika, and Worcestershire sauce. Pour in the beef broth and bring to a simmer.
- Add the tortellini and cook uncovered for 5–7 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Reduce heat to low and stir in sour cream and heavy cream until smooth and creamy.
- Simmer for 2 more minutes, then garnish with parsley and serve warm.
Notes
- Use ground turkey or plant-based meat as a lighter alternative.
- Add a handful of spinach before stirring in the cream for extra veggies.
- Leftovers reheat well for lunch the next day.
