For the Fritters:

  • 2 medium onions finely sliced
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • ¾ cup crumbled feta cheese
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ teaspoon dried oregano or thyme
  • 2 tablespoons chopped parsley (optional)
  • vegetable oil for frying

For the Dipping Sauce:

  • ¼ cup sweet chilli sauce
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon rice vinegar
  • ½ teaspoon sesame oil
  • ½ teaspoon grated fresh ginger (optional)

Instructions

  1. In a skillet, heat olive oil over medium heat. Add sliced onions and cook for 8 to 10 minutes until soft and lightly caramelized. Add garlic and sauté for another minute. Remove from heat and let cool slightly.
  2. In a large bowl, combine cooled onion mixture, crumbled feta, eggs, flour, baking powder, black pepper, salt, oregano, and parsley. Mix until a thick batter forms.
  3. Heat about ¼ inch of vegetable oil in a skillet over medium heat. Drop heaping tablespoons of the mixture into the pan, flattening slightly with the back of a spoon. Fry for 2 to 3 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  4. To make the dipping sauce, whisk together sweet chilli sauce, soy sauce, rice vinegar, sesame oil, and ginger in a small bowl.
  5. Serve fritters warm with dipping sauce on the side.

Notes

  • You can use red onions for a sweeter flavor.
  • Add a pinch of chili flakes to the fritter batter if you like heat.
  • The sauce can be doubled or made ahead and stored in the fridge for up to a week.
