Description

This Onion Beef Fried Rice recipe is a flavorful and easy-to-make Asian-inspired main course that uses thinly sliced marinated beef, sautéed onions, scrambled eggs, and chilled day-old rice for the perfect texture. Enhanced with savory soy and oyster sauces and a hint of sesame oil, this dish provides a balanced combination of protein, vegetables, and rice that’s perfect for a quick weeknight dinner or a satisfying leftover rice meal.

Ingredients

Scale

Beef and Marinade

  • 1/2 pound beef sirloin or flank steak (thinly sliced)
  • 1 tablespoon soy sauce

Rice and Sauces

  • 2 cups cooked and chilled white rice (preferably day-old)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil

Vegetables and Eggs

  • 1 medium onion (thinly sliced)
  • 2 garlic cloves (minced)
  • 2 eggs (lightly beaten)
  • 2 green onions (sliced)

Oils and Seasonings

  • 2 tablespoons vegetable oil (divided)
  • Salt and pepper to taste
  • Optional garnish: sesame seeds or extra green onions

Instructions

  1. Marinate the Beef: In a small bowl, toss the thinly sliced beef with 1 tablespoon soy sauce. Let it marinate for 10–15 minutes to absorb the flavors.
  2. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and cook for 2–3 minutes until browned and just cooked through. Remove from the pan and set aside to keep warm.
  3. Sauté Onions and Garlic: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Sauté the thinly sliced onion for 3–4 minutes until soft and golden. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Scramble the Eggs: Push the onion and garlic to the side of the skillet. Pour the lightly beaten eggs into the empty space and scramble until just set. Then, mix the eggs with the onions evenly.
  5. Add Rice and Sauces: Add the chilled cooked rice to the skillet, breaking up any clumps with a spatula. Stir in 1 tablespoon soy sauce, oyster sauce, and sesame oil. Mix thoroughly to coat the rice evenly with the sauces.
  6. Combine Beef and Finish Cooking: Return the cooked beef to the skillet. Stir everything together until well combined and heated through. Season with salt and pepper to taste.
  7. Add Green Onions and Serve: Stir in the sliced green onions just before serving. Garnish with optional sesame seeds or extra green onions if desired. Serve hot.

Notes

  • Using chilled, day-old rice prevents the dish from becoming mushy and helps achieve the perfect fried rice texture.
  • Feel free to add additional vegetables such as peas, carrots, or bell peppers for more color and nutrition.
  • For tender beef, thinly slice the meat against the grain.
  • Adjust soy sauce quantity based on your preferred saltiness level.
