Instructions
- Preheat oven and prepare baking sheets: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Prepare cookie dough: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. In a large bowl, beat butter, granulated sugar, and brown sugar until creamy. Add egg, red food coloring, and vanilla, mixing well. Gradually stir in the dry ingredients until combined. Fold in white chocolate chips.
- Make cheesecake filling: In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
- Assemble cookies: Scoop about 1 tablespoon of cookie dough, flatten it in your palm, place 1 teaspoon of cheesecake filling in the center, then cover with another tablespoon of dough, sealing the edges to enclose the filling.
- Bake: Place filled cookies on baking sheets, leaving 2 inches between each. Bake for 11 to 13 minutes, until edges are set.
- Cool and serve: Cool on baking sheets for 5 minutes before transferring to a wire rack.
