Orecchiette with Sausage and Broccoli:

  • 12 ounces orecchiette pasta
  • 12 ounces Italian sausage (casings removed)
  • 4 cups broccoli florets
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Extra grated Parmesan and lemon wedges for serving

Instructions

  1. Blanch Broccoli: Bring a large pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and just tender. Remove and set aside.
  2. Cook Pasta: Cook the orecchiette according to package instructions until al dente. Reserve 1 cup of pasta water.
  3. Prepare Sausage: In a skillet, cook sausage in olive oil until browned. Add garlic and red pepper flakes.
  4. Combine Ingredients: Add broccoli and pasta to the skillet. Gradually stir in pasta water. Remove from heat and mix in Parmesan.
  5. Season and Serve: Season with salt and pepper. Garnish with extra Parmesan and lemon wedges.
