Orecchiette with Sausage and Broccoli:
- 12 ounces orecchiette pasta
- 12 ounces Italian sausage (casings removed)
- 4 cups broccoli florets
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Extra grated Parmesan and lemon wedges for serving
Instructions
- Blanch Broccoli: Bring a large pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and just tender. Remove and set aside.
- Cook Pasta: Cook the orecchiette according to package instructions until al dente. Reserve 1 cup of pasta water.
- Prepare Sausage: In a skillet, cook sausage in olive oil until browned. Add garlic and red pepper flakes.
- Combine Ingredients: Add broccoli and pasta to the skillet. Gradually stir in pasta water. Remove from heat and mix in Parmesan.
- Season and Serve: Season with salt and pepper. Garnish with extra Parmesan and lemon wedges.
