  • 4 bone-in, skin-on chicken thighs (or drumsticks)
  • 1 tbsp olive oil
  • 1 tsp paprika

  • 1/2 tsp onion powder

For the Quick Homemade Barbecue Sauce:

  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Pinch of cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Season the chicken: Pat the chicken dry and rub with olive oil, then season with paprika, garlic powder, onion powder, salt, and pepper. Place the chicken on the wire rack and bake for 25 minutes.
  3. Make the barbecue sauce: In a small saucepan over medium heat, whisk together all barbecue sauce ingredients. Bring to a simmer and cook for 8–10 minutes, stirring occasionally, until thickened.
  4. Finish baking: After 25 minutes of baking, remove the chicken and brush generously with the barbecue sauce. Return to the oven and bake for another 15–20 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is caramelized. Brush with more sauce before serving if desired.
