Tamarind Sauce:

  • 1/4 cup palm sugar (or brown sugar)
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon chili flakes (optional)
  • 2 tablespoons water

Instructions

  1. Combine Ingredients: In a small saucepan over medium heat, combine tamarind paste, fish sauce, palm sugar, rice vinegar, soy sauce, and water.
  2. Thicken Sauce: Stir constantly until the sugar dissolves and the sauce is slightly thickened, about 3–5 minutes.
  3. Add Spice: Add chili flakes if desired for extra heat. Remove from heat and let cool before using in your Pad Thai dish.
