Dumpling Filling:
- 1/2 pound ground pork
- 1/2 pound ground shrimp or chicken
- 1 cup napa cabbage, finely chopped
- 3 green onions, finely sliced
- 2 garlic cloves, minced

- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
Additional Ingredients:
- 1 package (about 40) round dumpling wrappers
- 2 tablespoons vegetable oil
- 1/2 cup water
Instructions
- Prepare the Filling: In a large bowl, combine pork, shrimp or chicken, cabbage, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, salt, and white pepper. Mix well until sticky.
- Fill the Dumplings: Place a wrapper on a flat surface, spoon 1 teaspoon of filling in the center, moisten edges with water, fold in half, and pleat to seal.
- Pan-Fry: Heat vegetable oil in a skillet. Cook dumplings until golden. Add water, cover, and steam for 5–6 minutes.
- Crisp and Serve: Remove lid and crisp dumplings for 1–2 minutes before serving.
Notes
- Serve with a dipping sauce of soy sauce, rice vinegar, sesame oil, and chili flakes.
- Dumplings can be frozen uncooked; freeze on a tray, then transfer to a bag for later use.
