Pancake Batter:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1 large egg
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
Additional:
- 12 fully cooked breakfast sausage links (cut into thirds)
- Maple syrup for serving
Instructions
- Preheat the Oven: Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
- Mix Dry Ingredients: In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, whisk together buttermilk, egg, melted butter, and vanilla. Pour the wet ingredients into the dry and stir just until combined—do not overmix.
- Fill Muffin Cups: Spoon about 1 tablespoon of batter into each mini muffin cup. Press one piece of sausage link into the center of each.
- Bake: Bake for 12–15 minutes or until golden brown and a toothpick inserted into the batter comes out clean.
- Cool and Serve: Let cool for a few minutes before removing from the pan. Serve warm with maple syrup for dipping.
Notes
- You can use maple-flavored sausage for added sweetness or turkey sausage for a lighter version.
