- 2 cloves garlic, minced

- 3 cups low-sodium chicken broth
- 3 cups broccoli florets, chopped small
- 1 cup grated carrots
- 1/4 teaspoon ground nutmeg
- 2 cups shredded sharp cheddar cheese
- Salt and black pepper to taste
Instructions
- Heat the Pot: In a large pot, heat butter and olive oil over medium heat.
- Sauté Onion and Garlic: Add the diced onion and sauté until soft. Stir in garlic and cook for 1 minute.
- Add Flour: Sprinkle in flour and stir continuously to create a roux.
- Whisk in Liquids: Slowly whisk in half-and-half, then add chicken broth. Simmer until slightly thickened.
- Add Vegetables: Add broccoli, carrots, and nutmeg. Simmer until tender.
- Blend or Leave Chunky: Puree part of the soup if desired. Reduce heat and stir in cheddar cheese until melted.
- Season and Serve: Season with salt and pepper. Serve hot.
