Cauliflower Bites:
- 1 medium head of cauliflower, cut into bite-sized florets
- 2 large eggs
- 1 cup panko breadcrumbs

- 1/4 teaspoon salt

Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare Ingredients: Whisk eggs in a shallow bowl. In a separate bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
- Coat Cauliflower: Dip each cauliflower floret in the egg, then coat with the breadcrumb mixture. Place on the baking sheet and lightly spray with oil.
