Description

These Parmesan Smashed Potatoes are a crispy, flavorful side dish perfect for any meal. Boiled baby potatoes are gently smashed, seasoned with garlic, olive oil, and Parmesan cheese, then baked until golden and crispy. Served with a creamy garlic dip made from sour cream, garlic, and lemon juice, this recipe is easy to prepare and sure to be a crowd-pleaser.

Ingredients

Scale

Potatoes

  • 1 ½ pounds baby yellow potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)

Garlic Dip

  • ½ cup sour cream
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C) to ensure it reaches the perfect temperature for baking the potatoes.
  2. Boil Potatoes: Place the baby yellow potatoes in a large pot of salted water and boil for 15–20 minutes, or until they are fork-tender but still hold their shape. Drain well.
  3. Smashed Potatoes: Arrange the boiled potatoes on a parchment-lined baking sheet. Use the bottom of a glass or a potato masher to gently flatten each potato to about half an inch thick, being careful not to break them apart.
  4. Season Potatoes: Drizzle the smashed potatoes evenly with olive oil. Sprinkle with salt, black pepper, garlic powder, and grated Parmesan cheese to enhance flavor.
  5. Bake Potatoes: Bake the potatoes in the preheated oven for 20–25 minutes, or until the edges turn golden brown and crispy.
  6. Prepare Garlic Dip: While the potatoes bake, mix sour cream, minced garlic, lemon juice, and a pinch of salt in a small bowl. Adjust seasoning to taste.
  7. Garnish and Serve: Once baked, garnish the crispy smashed potatoes with chopped fresh parsley if desired. Serve warm alongside the garlic dip.

Notes

  • For a dairy-free version, substitute vegan Parmesan and use a dairy-free sour cream alternative.
  • Add crushed red pepper flakes to the potatoes or dip for a spicy kick.
