Description

For the Bolognese Sauce:

  • 1 tablespoon olive oil
  • 1 small onion (finely chopped)
  • 1 carrot (finely chopped)
  • 1 celery stalk (finely chopped)
  • 2 cloves garlic (minced)
  • 1 pound ground beef (or a mix of beef and pork)
  • ½ cup dry red wine
  • 1 cup whole milk
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional)

For Serving:

  • 1 pound pasta (tagliatelle, pappardelle, or spaghetti)
  • Grated Parmesan cheese
  • Chopped fresh basil or parsley

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot, sauté onion, carrot, and celery until softened. Add garlic and cook briefly.
  2. Cook Meat: Brown ground meat, add wine, simmer. Pour in milk, simmer again.
  3. Add Tomatoes & Spices: Stir in crushed tomatoes, tomato paste, oregano, salt, pepper, and nutmeg. Simmer sauce for 45 mins to 1 hour.
  4. Cook Pasta: Cook pasta al dente, reserve some pasta water.
  5. Combine: Toss cooked pasta with Bolognese sauce, adding pasta water to loosen.
  6. Serve: Garnish with Parmesan and herbs before serving hot.

Notes

  • For richer flavor, simmer the sauce for 2–3 hours if time allows. Leftovers taste even better the next day.
