Meat Sauce:
- 1 tablespoon olive oil
- 1 medium onion (finely chopped)
- 2 carrots (peeled and diced)
- 2 celery stalks (diced)
- 3 garlic cloves (minced)
- 1 lb ground beef
- 1 lb ground pork
- 1 cup whole milk
- 1 cup dry white wine
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
To Serve:
- 1 lb pasta (tagliatelle or spaghetti)
- Grated Parmesan cheese and chopped parsley for serving
Instructions
- Prepare Meat Sauce: Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion, carrots, and celery; sauté until soft. Stir in garlic. Add ground beef and pork, cook until browned. Stir in milk and simmer. Pour in wine and simmer. Add tomatoes, tomato paste, oregano, salt, and pepper. Simmer uncovered for 45–60 minutes.
- Cook Pasta: Meanwhile, cook pasta according to package instructions. Drain and toss with the sauce.
- Serve: Serve pasta with grated Parmesan and fresh parsley.
Notes
- For a richer flavor, simmer the sauce longer or add a Parmesan rind during cooking.
- This sauce freezes well and can be made ahead.
