Potato Salad:

  • 2 pounds potatoes, peeled and cut into chunks
  • 1 small red onion, thinly sliced
  • 4 green onions, chopped
  • 1/2 cup fresh parsley, finely chopped
  • 1/4 cup fresh dill, finely chopped

  • 1/4 cup extra-virgin olive oil
  • juice of 1 large lemon
  • 1 teaspoon sumac
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook Potatoes: Place the potatoes in a large pot of salted water and bring to a boil. Cook until fork-tender, about 15 to 20 minutes. Drain well and let cool slightly.
