  • 1 tablespoon butter
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup arborio rice
  • 1/2 cup dry white wine
  • 4 cups warm vegetable or chicken broth

Additional Ingredients:

  • 1 cup green peas (fresh or frozen)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • salt and black pepper to taste
  • chopped fresh parsley for garnish (optional)

Instructions

  1. Saute Onion and Garlic: In a large saucepan, heat olive oil and butter. Add chopped onion, cook until softened. Stir in garlic.
  2. Cook Rice: Add arborio rice, cook until slightly translucent. Pour in white wine, stir until absorbed.
  3. Add Broth: Gradually add warm broth, stirring constantly until rice is creamy and tender.
  4. Finish Dish: Stir in peas, Parmesan, lemon juice. Season with salt and pepper. Cook until peas are heated through.
  5. Serve: Garnish with parsley and serve warm.

Notes

  • If using frozen peas, no need to thaw before adding.
  • For a creamier texture, stir in a splash of cream or extra Parmesan.
