Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add egg and vanilla: Beat in the egg and vanilla extract until smooth.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Mix wet and dry ingredients: Gradually add the dry ingredients to the wet mixture until just combined.
- Add peaches and chocolate: Gently fold in the diced peaches and white chocolate chips if using.
- Prepare topping: Mix graham cracker crumbs with melted butter.
- Form and bake cookies: Scoop dough into 1 1/2 tablespoon-sized balls and place on the prepared baking sheet. Press a pinch of graham cracker mixture onto each cookie. Bake for 10 to 12 minutes until golden.
- Cool and serve: Let cool on the pan for 5 minutes before transferring to a wire rack.
