Ingredients

Ripe Peaches:

4 peaches, peeled, pitted, and chopped

Cucumber:

1 large cucumber, peeled and chopped

Red Bell Pepper:

Shallot or Red Onion:

1 small shallot or 1/4 red onion, chopped

Garlic:

1 clove, minced

White Wine Vinegar:

2 tablespoons

Olive Oil:

Lemon Juice:

Cold Water:

1/2 cup (more as needed)

Fresh Basil or Mint:

Instructions
