Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Peach Filling:
- 3 cups fresh or canned peaches, diced
- 2 tablespoons cornstarch
- 1/4 cup granulated sugar (for peaches)
- 1/2 teaspoon ground cinnamon
Glaze:
- 1 cup powdered sugar
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
- Prepare Crust: Cream butter and sugars, add eggs and vanilla. Mix in dry ingredients to form dough. Press two-thirds into the pan.
- Make Peach Filling: Toss peaches with cornstarch, sugar, and cinnamon. Spread over crust and crumble remaining dough on top.
- Bake: Bake for 35-40 minutes until golden. Cool completely.
- Glaze: Whisk powdered sugar and milk, drizzle over bars. Cut and serve.
Notes
- If using canned peaches, drain well and pat dry.
- Store leftovers in an airtight container for up to 3 days.
