Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Peach Filling:

  • 3 cups fresh or canned peaches, diced
  • 2 tablespoons cornstarch
  • 1/4 cup granulated sugar (for peaches)
  • 1/2 teaspoon ground cinnamon

Glaze:

  • 1 cup powdered sugar
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
  2. Prepare Crust: Cream butter and sugars, add eggs and vanilla. Mix in dry ingredients to form dough. Press two-thirds into the pan.
  3. Make Peach Filling: Toss peaches with cornstarch, sugar, and cinnamon. Spread over crust and crumble remaining dough on top.
  4. Bake: Bake for 35-40 minutes until golden. Cool completely.
  5. Glaze: Whisk powdered sugar and milk, drizzle over bars. Cut and serve.
