Enchiladas:

  • 6 small flour tortillas
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup water

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Mix Peach Filling: In a medium bowl, combine peaches, granulated sugar, cinnamon, nutmeg, and vanilla. Add cornstarch for fresh peaches.
  3. Fill and Roll: Spoon peach mixture onto tortillas, roll them up, and place seam-side down in the baking dish.
  4. Make Sauce: In a saucepan, melt butter, mix in brown sugar and water, bring to a boil, then simmer.
