Description

This Peach Quick Bread is a delightful treat that perfectly captures the essence of summer. Filled with juicy peaches and a hint of cinnamon, this easy-to-make bread is great for breakfast or as a snack.

Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet Ingredients:

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Add-Ins:

  • 1 1/2 cups fresh or canned peaches, peeled and diced
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. Combine Wet Ingredients: In a separate bowl, whisk the eggs, vegetable oil, milk, and vanilla extract until smooth.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Add Peaches and Nuts: Fold in the diced peaches and nuts if using.
  6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • You can substitute fresh peaches with well-drained canned or frozen peaches.
  • For extra sweetness, drizzle with a simple glaze made of powdered sugar and milk once cooled.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
