Ingredients
Scale
Peanut Butter Balls:
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
- 2 cups chocolate Rice Krispies cereal
Chocolate Coating:
- 10 ounces semi-sweet chocolate, melted
- 1 tablespoon coconut oil (optional, for smoother coating)
Instructions
- Mix Peanut Butter Mixture: In a large bowl, combine peanut butter, softened butter, and vanilla until smooth.
- Add Powdered Sugar: Gradually mix in powdered sugar until fully incorporated.
- Stir in Cereal: Gently fold in chocolate Rice Krispies until evenly coated.
- Form Balls: Roll mixture into 1-inch balls and place on a parchment-lined baking sheet. Refrigerate for 30 minutes to firm up.
- Coat in Chocolate: Melt chocolate with coconut oil, if using. Dip each peanut butter ball into the melted chocolate, allow excess to drip off, and return to the sheet.
- Chill and Serve: Chill until the chocolate sets, about 30 minutes. Enjoy chilled or at room temperature.
Notes
- Store in the refrigerator for up to 1 week or freeze for up to 2 months.
- For extra crunch, roll in crushed Rice Krispies before the chocolate sets.
