Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips

Cheesecake:

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven and Prepare Pan: Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Make Cookie Dough: Cream butter, peanut butter, sugars, eggs, and vanilla. Mix in dry ingredients and chocolate chips.
  3. Layer and Bake: Press two-thirds of cookie dough into pan, top with cheesecake mixture, then remaining cookie dough. Bake for 35–40 minutes.
  4. Cool and Chill: Cool in pan, then refrigerate for at least 2 hours before cutting into bars.
