Instructions
- Preheat oven and prepare baking sheets: Preheat oven to 350°F and line two baking sheets with parchment paper.
- Cream butter, peanut butter, and sugars: In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla: Beat in egg and vanilla extract until combined.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
- Mix wet and dry ingredients: Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Fold in cereal: Gently fold in Rice Krispies cereal.
- Shape and bake: Drop rounded tablespoons of dough onto prepared baking sheets, flatten slightly, then bake for 10–12 minutes until golden brown.
- Cool and enjoy: Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
