For the Cookie Bars:
- 1 cup unsalted butter, melted and slightly cooled
- 1 cup creamy peanut butter
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
For the Peanut Butter Frosting:
- 2 cups powdered sugar
- 1/4 cup milk
- 1/4 cup creamy peanut butter
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- Mix Wet Ingredients: In a large bowl, whisk together melted butter and 1 cup peanut butter until smooth. Add sugar, eggs, and vanilla extract; mix until fully combined.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Bake: Spread the batter evenly in the prepared pan. Bake for 25–30 minutes, or until golden brown and a toothpick comes out clean.
- Make Frosting: While bars are baking, make the frosting by whisking together powdered sugar, milk, and 1/4 cup peanut butter until smooth and spreadable.
- Frost and Serve: Remove bars from the oven and while still warm, spread the frosting evenly over the top. Allow to cool completely before slicing into bars.
Notes
- For extra texture, you can sprinkle chopped peanuts or mini chocolate chips on top of the frosting before it sets.
