Description

Indulge in the nostalgic flavors of school cafeteria desserts with these Peanut Butter Lunch Lady Cookie Bars. Rich and chewy bars topped with a creamy peanut butter frosting, these treats are a guaranteed crowd-pleaser!

Ingredients

Scale

For the Cookie Bars:

  • 1 cup unsalted butter, melted and slightly cooled
  • 1 cup creamy peanut butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

For the Peanut Butter Frosting:

  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/4 cup creamy peanut butter

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, whisk together melted butter and 1 cup peanut butter until smooth. Add sugar, eggs, and vanilla extract; mix until fully combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  4. Bake: Spread the batter evenly in the prepared pan. Bake for 25–30 minutes, or until golden brown and a toothpick comes out clean.
  5. Make Frosting: While bars are baking, make the frosting by whisking together powdered sugar, milk, and 1/4 cup peanut butter until smooth and spreadable.
  6. Frost and Serve: Remove bars from the oven and while still warm, spread the frosting evenly over the top. Allow to cool completely before slicing into bars.

Notes

  • For extra texture, you can sprinkle chopped peanuts or mini chocolate chips on top of the frosting before it sets.
