Instructions
- In a medium saucepan, combine the sugar, butter, and milk. Stir constantly over medium heat until the mixture comes to a full rolling boil.
- Drop spoonfuls of the mixture onto parchment-lined baking sheets, flattening slightly if desired.
Boil for 1 minute, then remove from heat. Quickly stir in the peanut butter, vanilla extract, salt, and oats until fully combined.
Allow the cookies to cool and set at room temperature for about 30 minutes before serving.
